Approximate Purchase Date: ASAP. I plan to place the order by Friday.
Budget Range: 1500-2500. I am not too price sensitive and am willing to pay up for better parts.
System Usage from Most to Least Important: See paragraph below.
Are you buying a monitor: Already have 2x 23' 1920x1080 (connected to DVI-D and D-Sub using integrated graphics) and 1x 768 TV (connected to HDMI using integrated graphics) but can use only 2 of 3 screens at once. May consider replacing the 23' monitors with 27-30' ones (1920x1080 or 1920x1200) in the future.
Parts to Upgrade: Everything (except monitor, potentially).
Do you need to buy OS: No. Will be using Windows 7 and/or Linux.
Preferred Website(s) for Parts: Newegg but any cheaper site/physical location is fine.
Location: City, State/Region, Country: Bay Area, CA, USA
Parts Preferences: The CPU (8700k) and memory (64GB, latency/frequency) is a must. Everything else is optional.
Overclocking: Yes. Hope to achieve 5GHz+. May or may not overclock memory one or two small steps.
SLI or Crossfire: No. See paragraph below.
Your Monitor Resolution: 2x 1920x1080. See monitor above.
Additional Comments: See paragraph below.
And Most Importantly, Why Are You Upgrading: See paragraph below.

Paragraph Below:

My old computer (i7-3770K) died and I need to build a new computer ASAP. I have some experience building 7-8 computers from 2008-2013 but have not built one since 2013, so my knowledge/experience may be outdated.

The computer will be used mainly for work that requires lots of computing power (CPU/memory), as well as for personal use, such as web browsing and playing old school games (brood war, cs 1.6).

Questions:

1) No video card. I don't play intense games and Intel's integrated graphics has served me perfectly well over the past five years. However, I did try to pick the parts (case, PSU, motherboard) to accommodate adding 1 top-of-the-shelf or 2 bottom-of-the-shelf graphics card in the future. Would these upgrades be doable with the current setup?

2) I hear it's better to get 4x16GB (more expensive) rather than two sets of 2x16GB due to the sticks' compatibility issues. Is this true empirically? Any links would be appreciated. The 4x16GB option would be (https://www.newegg.com/Product/Product.aspx?Item=N82E16820232220).

3) I would great appreciate any feedback on compatibility issues, as well as general feedback with regards to better parts, etc. (but compatibility of above parts is more important as I need to get the order out ASAP).

Thanks a lot!

Thanks for the heads up. I saw the cheap prices/high ratings but wasn't too familiar with the brand (my previous ones were mostly corsair, with a few exception of built-in PSUs in slim cases). I will stick with Corsair and consider recommendations.

Thanks. Will update. How does this compare to (https://www.newegg.com/Product/Product.aspx?Item=N82E16817139148)? Corsair hasn't failed me so far, and I don't mind paying an extra couple bucks for the extra 30W for potential upgrades in the future.

Does the rest of the build look okay?

I went through the price breakdown by merchant as well as Google Shopping with my zip code. It seems that I can get the processor through a 3rd party seller on Amazon (still Prime) without paying the hefty CA sales tax. Saves ~$45 compared to Newegg!
