Dual Boot with laptop with two HDD's

Hi Guys

So I want to remove my CD drive from my laptop and replace it with another SSD. Basically having two HDD's in my laptop.
Is it possible to dual boot with Windows installed on the one and Linux installed on the second SSD?
Theoretically it sounds possible, but what about the GRUB?
Also, not sure if this is even possible, can one hot swap between OS while the other is running instead of using VM and restarting to choose the other OS?
