Can I buy one stick of memory, and have it on single channel for a while, then when I get the money/need buy another stick of the same model/size/speed/everything and put them in dual channel? Or do I need to actually buy them in a pair at the same time in the same package?

As long as both banks have the same amount of memory you will be able to run dual channel, it doesnt even need to the same specs but youll be limiting your overclock by doing so.

Splendid
dario is right for the best chipsets (e.g. recent Intel), but others may require the same internal organization and/or speed/timing. Your motherboard manual should provide details.
