**Looking to run dual curved 49" monitors for productivity requirements, will use a vertical monitor mount for them.
I do not believe the 3080 can handle both at least at their max resolution.

The post is a little confusing, you've posted the thread in the systems section, but have asked for GPU and monitor suggestions...? You should be fine with an RTX 3080 seeing how the max resolution (using DP 1.4a) is 7680x4320(same story with the RTX 3090).

As for your build, I'd pick at least a 360mm AIO for that processor, up the primary SSD's capacity to 500GB ad perhaps add a secondary SSD or an HDD for the sake of storage.
