I think that GIGABYTE MD60-SC0 E-ATX / SSI EEB Server Motherboard 2 x LGA 2011 R3 will be able to support 2 of any of the following i7 processors:
Intel® Core™ i7-5960X Processor Extreme Edition
Intel® Core™ i7-5930K/ i7-5820K Processors
Intel® Core™ i7-6950X Processor Extreme Edition
Intel® Core™ i7-6900K / i7-6850K / i7-6800K Processors

So, the question is, that if I get that setup done, will it work?

Clock for Clock they if you have the same CPU architecture they are identical. However factor in the XEON generally have a lower clock speed. Plus add in the fact that they use the lowest speed memory and it's ECC. XEONs are not better for gaming....ever.

If you are wanting a gaming rig you are looking at the wrong platform. For gaming youd be better off with a socket 1151 i7 like the 7700k and a top end gpu. Rather than spening alot of money on a server/workstation grade dual cpu board and dual Xeons. Theres alot if wasted money there for a gaming rig. Hell that motherboard alone costs about what a 7700k and a z270 board would cost.
