So adding another monitor, would it increase the amount of electricity being used?

Yes, depending on the usage of the monitor. No, you will not notice any big impact just by adding another monitor.

There will be a difference. Usually it's not much, but sometimes it can be substantial.
Extra power usage due to multiple monitors is usually because the graphics card isn't idling properly with multiple monitors attached. I have a 6870, and in going from 1 2560x1440 monitor to 2, my IDLE power usage goes up by an entire 60 watts.
