Dual Monitor Laptop

OK so I have a laptop with an HDMI connection. I was wanting to know if I get a monitor with HDMI on it as well, can I used the Laptop with the monitor as dual monitors via the HDMI

Yep.
I do that with my girlfriends laptop when we watch movies. Get the movies streaming on the laptop and drag them over to the TV on her wall via HDMI. (She thinks its magic)
