Question Dual Ultra Wide Montiors - Resolution issue

I have purchased 2x LP34WK500-P, And i am having issues with resolution.
My Specs are:
CPU: i7-9700 @3.60Ghz
GPU: RTX 2070 8 Gb DDR6
Memory: 16 Gb, 3200hz
MOBO: MSI 370-Z Pro.

My Graphics Card has 3x Display Port, 1 HDMI, and 1 Type C ports. The monitors only have HDMI as such i currently have one plugged in with a HDMI 2.0 cable and i am able to run at a full 2560x1080 / 75Hz, However on my second monitor, i am using an HDMI 2.0 cable with a HDMI to Display Port adapter. it seems to max out at 1080p 1920x1080 60 Hz. I have confirmed that the issue lies either in the Cables/Adapter, or GPU itself. As i connected the second monitor with the connections from the first, and was able to run it at 2560x1080 / 75Hz.

I have also Tried a HDMI to Display Port cable (Amazon basics model) and get the same issue.
I have checked the GeForce website, it says- Maximum Digital Resolution 7680x4320 (https://www.nvidia.com/en-us/geforce/graphics-cards/rtx-2070/ View Full specs, Right column)
Drivers Have been updated, for monitor, GPU, Windows,

So what i cant figure out is if my card can not handle 2 Ultra wides, or if it is a Cable/adapter issue.
