In dual channel mode your memory bandwidth doubles and you will get better performance. While one module reads the other one writes.
You will not see a performance increase in gaming with 1600 vs 1066 even if you get the 1600 the motherboard will just clock it down to 1066 or 1333 or to whatever memory speeds your motherboard supports. I'll stick to the 2 1066 modules in dual channel or get 2 sticks of those 1600's but you will probably have to manually change the memory timings in the bios (for the 1600's), the only benefit you will get with the 1600's is if you are overclocking.
