Dual xeon E5-2665 workstation.. is it compatible with a brand new GTX?

Hi everyone, I am trying to build my own workstation and not sure which cpu package would suite me better, the aime is to have an as fast as possible cpu for rendering purpose (3ds max and vray).
I am considering using the old xeon E5-2665 or the E5-2680 in a dual processor system since these two are much cheaper than new xeons. and use the saved money to buy a GTX 1080ti (needed for lumion).
my concern is about the cpu/gpu compatibility. please I need help and comments on what I am doing here.

So a dual E5-2665 Xeon system would be good for V-Ray Adv but either the 2.4 GHz E5-2665 or 2.7 GHz E5-2680 would be a poor choice for 3ds Max. Single core speeds are what matters for 3ds Max. And if you are using V-Ray RT then the CPU becomes less important and GPU considerations take over.

Looks like two 2665's would be in the range of $280 US.

If you are using V-Ray RT then you might want to consider a 3.4 GHz 6-core i7-6800K, it is only $45 dollars more than two 2665's. This also means you will have a better selection of mobos and you will be able to overclock if desired.
