can I use gtx 1080 with e5 2697 v2.

Would perform about as good as a 3350p in most cases. It'd be a massive bottlneck in most cases. It's a 2.7 GHz clocked ivy bridge CPU.

it will work but that xpu is not a speed monster, expect mixed results in games

for productivity, video edition should be ok
