Enabling V-Sync while my GPU is capable on much higher fps.

So I have an Asus Strix GTX1070 and a 6700K. My monitor is BenQ GL2460HM, it's a 1080p 60Hz monitor. As you know, the 1070 crushes every game on 1080p ultra settings, so it will run pretty much every game over 70-80fps, so the question is: as a 60hz monitor owner, should let the games run at 110fps (I'm talking about BF1 now) while I'm not seeing over 60 because of my monitor ? or should I enable v-sync so I won't face any stuttering and not waste my PC's horsepower on nothing? I'm planning to get a 1080p 144hz monitor ASAP

Depends on game - not every one you have runs on the same FPS. I would not worry about wasting PC horsepower - just test each game if it *looks* better with V-sync or without it, and stick to the better choice for each game. Also some games allow to turn on in-game FPS cap, so you can use that too.
