Everything I need to know about overclocking

Hey guys,
Sorry for the shuddy title, couldn't think of anything else to write.
So yesterday I started overclocking my Intel i5 4690K with my Corsair h100i water cooler. I had read up how to do it and had watched a couple of videos and then followed them. After reading a couple of other people over clocks for the same hardware: (My computer specs)
Intel i5 4690K
G-Skill Ripjaws 1866mhz 8gb (2x4)
MSI Gaming 5 Mobo
GTX 780 (MSI Twin Frozr Edition OC)
And I assume that the rest doesn't really matter in terms of overclocking.
Before I started the overclock I did a prime95 torture test on it for 24 hours with all BIOS setting on default. This showed no errors. I also purchased Intels OC insure just to be safe, also, it didn't cost much.
Because it was my first time overclocking I wanted to take it slow and easy, so instead of doing what most people do and ramp up the Vcore to about 1.25 and then the multiplier to something like 45, I didnt change the Vcore and just took the multiplier up 1 at a time (37,38,39 sort of thing)
I managed to get to 4.2Ghz at about 80 degrees (which seemed strangely high considering I have water cooling) I then stopped overclocking and read up on high heat and how not having a manual Vcore can make it fluctuate and possibly damage the CPU and increase temperatures. Reading this then sent me into a whole set of new worries and made me very confused. After this I reset the overclock to facory default (35 Multiplier) and just started to look up what all of the other options in the Voltage and Multiplier were. Strangely I couldn't find much that had all of this data. So I came here to see if anyone can explain all of the options in my motherboards BIOS for overclocking. Also, if anyone has any experience on the 4960K itself that would be very helpful.
Sorry for the long post, I hope someone can help.
(I will be attaching images of the BIOS so people can see it)

Here are the MOBO setting:

Thanks in advance. Sorry if there are any mistakes, I was in a rush when this was typed.
