Evga gtx 680 sc+ 2gb Overclocking.

Solution

Wait, watercooling on your GPU or CPU? I'm a bit confused. We were talking about your 680, and that's not watercooled. Anyway, since I already said that there will be variance of OC performance as a result of luck-of-draw, I'll give you a subjective...
It would depend on how far you can OC your card, after all OCing is subjective as very chip is different from the rest. The only real advice I could give is to try and OC your card, the Superclocked edition cards from EVGA are built to be overclocked after all. If you think the performance boost is acceptable for the temperature trade-off, then keep the OC, otherwise, you can always roll it back.

I've got water cooling. just need to know how much of difference it would make.

I once overclocked a GT 440. Since I had poor thermals then, I was only able to raise my VRAM and core frequencies by a bit. The OC gave me about +3fps in games with the same settings. So, I guess a great OC yields about +10 fps boosts, but that's just a subjective assessment of the matter.
