Existential question about PSUs

Dear Community,

I want to make a PC with a single R9 390X now and add another one later later, but i only want to buy ONE PSU ONCE. Can I buy a 1200 Watt CPU and use it for the single and dual GPU configurations? If so, which one would you recommend?
