I will buy some premium build with 5900X and X570 mobo..

Gen 4 is worth it? for 2TB capacity the difference from gen 3 to the fastest gen 4 is 200$.

I think the main use is gaming and general use and maybe video editing in the future..

Or it is better to save money?

You will see higher benchmark values, but no real world benefit unless you have very specific, storage limited problems like frequent 4K video editing. Since your answer is "maybe video editing", I would say you will get no benefit.
