Hey! I just bought a new power supply and replacing my old one now, do I need to plug ALL of the cables even though I dont need them yet? because it tells me to plug the pcie cables but im just using an itx gpu for now, the same goes for the sata cables, I only have 1 hdd and 1 ssd. thanks in advance for those who can answer! :D

Yeah just the cables you need.

Fyi, not that ya gonna but helps spread the word. Never mix modular power cables from different psus. The outcome can be pretty bad as pinouts from psu's can change even though the plug looks the same. The voltage & earth wires can be in different spots and this has caught many out. So only use the original cables (when needed) the psu comes with. 😊
