Fan loud , how can I turn them down or basically off?

Turned it down to 3 pin server and it's definitely quieter, just wondered if I could make it even more quiet till I can get it in a better location

Those options are not for fan speed. They tell the BIOS what type of fan and connection it is using.
If you used to have it on disable and it was louder, that may be because there is an option elsewhere in BIOS that adjusts the actual speed. And by taking it off of disable (full speed), that other option allowed the fan to run slower. What motherboard is it?
