Hey there!

I'm looking to build a new rig with a budget of around 2000 € (excl. monitor), this build will be mainly used for gaming and video editing. For the monitor I'm looking at ultrawide ones (3440 x 1440 ), but I'm in no rush to purchase one at this point. At the moment I have set my mind on the parts below, any comments? Generally all suggestions will be considered.

Looks pretty good to me. Have you checked the GPU width compared to the m-ATX case?
I would probably get an M.2 boot drive at least but I'm not sure if the speed differences are noticeable to a conventional SSD.

Good point! Changed my SSD to a M.2 one. GPU fits well within the case, so no worries on that! :)

Looks good only thing I would suggest is to get 3600Mhz CL16 ram
Is it worth the extra price? Is there a major difference with 3200mhz / 3600mhz in terms of performance?
