First build, $350 USD budget (minus case, HDD, and OS). Any advice?

g3258 much better for the games you are wanting to play, and can be cheaper. With this budget you are going to want to overclock, the g3258 easily overclocks to 4.2-4.4ghz on stock cooling and h81 board.

But wouldn't a quad core be a better choice for more recent games?
And I really don't want to void my warranty by OC'ing

Definitely not for Skyrim, and most games that are running more than 2 threads, there is usually only 1 heavy single thread, with much smaller threads. This is why a g3258 overclocked and its extreme ipc will do better in most games, even recent games

take a g3258 and overclock the heck out of it with an anniversary mobo from asrock
its almost like the two were made for each other.........oh wait they WERE!
other than that everything else looks decent
