First System Build Need advice on Everything

So my previews post i did not really put i any info on what i needed and what i didnt need so this one i'm going to try really hard on the infos.
I have a budget of $1250
Uses:
Multi-tasking- having lots of applications and windows open usually running all at full speed.
Video Editing- Video conversion, ripping, maker
Lots of Gaming- i havent really played with games like crysis or anything i like that but will probably will in the future when i have time.
Watching movies and videos- I'm going to connect my computer to my 42" 1080p tv and probably be my main screen. i watch lots of movies on my computer so the better resolution i get the happier i am.
Overclock- yes i will overclock my pc just to get a use of my money. I have no idea whether to go with core 2 quad or i7 or what so ever so i need a suggestion on that.
Hard drive- Also I need a suggestion on whether i should get both ssd and an hdd i would like to know the benefit i go for both. i would like fast boot up speed and fast file access.
Crossfire and sli. i'm planning on doing it in the future but not right not so the best gpu i can get would be best for now
Cpu- i dont know what to get for my needs but like i said i would be overclocking.
ddr2 and ddr3 whats the difference and benifits.
