The H97 will not let you OC the K processor, seems like a waste of a K processor, see if you can't get a z97 board instead, if you do so and want to OC the cpu you'll also want a better cooler than the stock on that comes with the i7.

If you want to reduce the price of this, I recommend spending less on a cpu. Keep the GTX 970. Change out the i7 for an i5-4460 and then you don't need a z97 motherboard.
Western Digital hds are known to fail less than seagate.

Im from the Netherlands, but I will pick the parts from this site and they will build it for me, but anyway I don't know much about OC, so any suggestions whether to get K series + z97 or without?

For your needs you need a balanced system, hard drive/ram/cpu/gpu are all equally as important working with the apps you mentioned. I can get a single Premiere file to 28 GB RAM alone so overkill for this type of build, definitely not. Never go with just 2 drives it'll slow everything down, you want a dedicated scratch disk and media drive, and export drive to balance it, resulting in faster workflow and lower render times than going with a more powerful CPU. Except in this case the CPU is about the same as the Xeon in this build except no overclocking or integrated graphics.

Edit: Andy, I have to agree here, WD is a great brand though I don't think he will run into any issues, hard drives don't really fail unless you physically harm them from my experience.

Will the i5's or Xeon's be good for editing? Do I need to have a CPU cooler?

Also for what I concluded what you guys suggested, this is the updated one, although I couldn't choose which Cpu, motherboard and harddrive/ssd I should get, because when I buy them in 1 TB's in my country they will be double the price. Just changed GPU only

I'm not a professional, but isn't 3 TB too much instead of getting a better cpu/gpu. For instance you get 2TB for 80. And upgrade something else?

 
Yes and no. 1 drive would be a scratch disk, and nothing else, 1 would be export, 1 would be media, and the ssd your os/programs. You can't get a much better processor than that, the i7 has got hyperthreading but look at the price on that website. GPU however could be upgraded if you drop 2 HDD's if you don't want to optimise your system enitrely to lower render and workflow time, then yeah by all means go for it!
