This is my first build on this website. Going for a PC that will crush games like Fallout 4 and Monster Hunter World on highest detail at 60fps. Aiming to keep it in the realm of $2,000 with potential for upgrades

I'm not so sure about the graphics card as it doesn't seem to be SLI compatible. Is it more worth my money to get 2 smaller graphics cards or one larger capacity one?

Any thoughts or suggestions would really help me out. Over all, trying to get the best performance while not spending too much money.
 
Solution
1. Old gen I7 may not be the best choice any more, coffee lake will be better choice
2. SLI for gaming is not a good idea, some games may not support, GTX 1070+ allows SLI
3. 1060 6gb is good with 60 hz monitor, to run 100+ FPS, you will need 1070 for AAA titles
4. psu is overkill, even 450 good quality can handle your rig.
My edits with 1080p 144hz gaming, wait for 1070 price to come back to normal and add a gsync monitor:

You have an unlocked cpu and expensive cooling paired with a dangerously cheap locked motherboard. The case is highly overpriced as well as the psu and keyboard.

Single more powerful gpu is the way to go but 1070s on up are insanely overpriced right now - double what they should be.

I’d do something like this. More ssd space, quality overclocking mobo, $125 cheaper than your build after adding in your xbox controller.
