For VMware, does RAM speed make much difference?

I've been playing around with non-Windows OS'es in VMware Player, to learn operating systems I might a bit of practice on for jobs. I've gotten my RAM usage barely below the limit of 8GB in VMware. My computer is a very capable gaming PC, but when I tried a stress-test by running a one virtual OS with a free app store game while inVMware, it ran like dog poop. I noticed the RAM usage shot all the way up to the 8GB ceiling.

Since I'm planning on running servers in VMware and learning VMware inside-and-out, I'm gonna want 16GB RAM. My computer is running 8GB of DDR3 RAM @ 1333MHz. When I upgrade my RAM to 16GB for VMWare, will RAM speed make much difference, or 1333MHz is fine?

Not so much the speed, but how much memory out of physical memory you provide for the VM you set up.

VM`s are also cpu core dependent as you know

So in answer to your question when running multiple VM`s at the same time more physical memory is better with a cpu running at a good and fast clock speed, and as many cpu cores you can provide.

Also running a VM from a SSD based drive instead of a mechanical drive helps to improve speed and responsiveness of VM`s.

Your Hard Drive or SSD is going to make more of a difference. If you want an performance increase run your program in a RamDrive and section RamDrive like you would a Hard Drive into different partitions. You might want to check out Microsoft's version in Windows 8 - 10 pro or above version as it is free.
