Formatting NVME M.2 help

I’m provisioning for a build and need some advice. I intend to use a 500 GB NVME M.2 partitioned for Win 10 250 GB, and 250 GB Mac backup. Which OS should be used to partition the NVME? (I will use a MyDigitalSSD M2X Portable USB 3.1 External Enclosure Adapter to do the job.)

One suggestion. Make the partitions different sizes, so at a glance you can tell which is which. Maybe 300 / 200.
