How can I have an average FPS counting, something like this

Many games have built-in FPS counters you can turn on. Look that up for the desired game.

If you want something universal: Tools like FRAPS are common enough. Not all games will let you run overlays in multiplayer though, one of the most common anti-cheat methods is to deny other applications access to draw on the screen.

MSI afterburner is a good tool to get accurate temps. Look up a tutorial on how to set-up temperature monitoring via afterburner, they can explain it much better than I could on here.
