So recently i switched to a 2560x1080 Monitor which is my only monitor connected to my GE62VR MSI Gaming Laptop. But recently experiencing a large about of frame drop playing games that would normally run at 100+ FPS. Recently I've been trying to play Apex Legends and some points of the map i can get 90 frames and other it will drop to 40 frames.

Some points on games are more demanding on others. You could be at one side of a map with a lot of buildings running at 45fps and on the other side where it's a giant plain and get 100+ fps. It's normal for a GPU like that to do that. It also has to handle a higher resolution width than before. Hope this helps.
