Once I am at the altitude I want to be and I try to trim,
I find I have to press my joystick button from 15 to 20
times before the plane will stablize on level flight.
Does this sound normal, or is there something I should
know about in the settings, etc.?

You may simply hold the button instead, if it doesn't work check the
assignments in FS for trim, that repetition is checked for that
joystick command...

Sounds normal otherwise 🙂

Take a look at your panel and see what sort of trim wheel
movement you are getting. You may have your elevator
sensitivity set too low, or deadband set too high. Some
aircraft respond differently than others... and while
15 or twenty seems high, I've seen it happen also.
Make sure to check out Katy's suggestion re 'repetition'.
