I just installed my fx-8320 over my fx-6100, went to windows, checked cpu-z for voltages and what not, and i saw there 6 cores - 6 threads.

wait a minute i have an 8320 i should have 8 / 8, went to bios and selected manually adjust CPU cores, these were the options

3rd & 4th core

5th & 6th core

7th & 8th core

but no 1 & 2.

have you reset the bios? normally when swapping anything like CPU you should restore the bios to defaults. sometimes you have to move a jumper on the motherboard to clear cmos/rest bios, but newer boards may have different, easier ways. Check your mobo manual to make sure. Once reset you should be good to go.
You may also need a bios upgrade to take the new CPU so check that too.

popped the battery out and started / shut it, put battery back, went to post screen, then a message came ; to recover bios press F1 ( i couldnt press anything else )

it appears to me that everytime i try to reset the bios or somethin it recovers it to "6100" bios
