G4560 to i5 7600K

Can I upgrade my processor from a G4560 to an i5 7600k using the same motherboard? And will it bottleneck the GTX 1060?

Yes you can and a 7600k won't hold back a 1060.

even g4560 is good match to 1060,
7600k is better and do get good cooler to overclock 7600k if your motherboard is Z chipset.
