Gaming build - GPU help

Hello, Im about to build my first gaming machine, Ive managed to narrow alot of it down just need help with GPU

I have a recently purchased 500w PSU and new case, They are in the existing machine and will be going into the new one

New parts
Mobo - MSI B150m Bazooka or Mortar
RAM - 8gb ddr4-2133
CPU - i5 6500
GPU - i was set on the GTX 970 £180ish understand that can do what i require and possible VR in the future. I play mainly racing games with a bit of Fifa and COD thrown in. It will mainly be on 1 monitor but having the option for 3 displays is nice. again understand the GTX970 can do both triples at 1080p 60FPS and VR

However whilst this will play nearly everything for me now. what about a couple of years down the line. Is it worth me speading abit more and getting something like the GTX 1060 6gb version or a different GPU that would last me longer? The GTX970 seems a very good performace/price mark for my budget

Want this to last me a few years ideally, the above parts are my rough budget and finding it hard to get much better value for money
 
GTX 1060 (even 3GB) is performing better than 970. definitely better buy for the same price.
GTX 1060 6GB is 5-6% faster than 3GB but cost 20-25% more.
So for budget restricted system, a 1060 is an excellent choice.
