Gaming FPS at 1080p and 1440p (what's considered overkill?)

I would like to hear your take on 1080p vs. 1440p gaming concerning frames per second..

1. What is the FPS where games are playing at full capacity?

The reason I'm asking that question and how it relates to 1080p and 1440p is simple..

At what point is your graphics card(s) overkill for gaming?

In other words, who cares if your system can do 300 FPS if you're gaming in 1080p?

I'm not sure if this is correct, but it seems 60 FPS is sort of the area where games play at full capability and anything more than 60 with max settings is simply wasted technology and more about bragging rights than actual utilization?

Right now i'm trying to decide if I really need 1440p, 1600p or 2160p gaming?

What's some overwhelming benefits beyond 1080p that will make me go.."hell yeah i gotta have this!"

I have 2 rigs currently that can easily play max settings at 60 FPS or more at 1080p

Intel rig with 4770k and Evga GTX 780 SC
AMD rig with 8350 FX and (2) Evga GTX 660 FTW Sig 2

I recently bought (2) Evga GTX 980 classified cards that I plan on using to upgrade my Intel system and I will probably sell the other one..

I am monitor shopping which is the main reason why I'm starting this discussion

I can get a 3 monitor setup at 1080p for 50% less than a 2 monitor setup at 1440p. I currently have a 1050p monitor, so I'm trying to decide what to buy?

I could always give the 3 1080p setup to my kids for gaming and upgrade to 3 1440p or 2160p when I have more money where I can actually utilize the technology of the 2 980's

Any advice or input from experienced gamers with multi monitor setups?

I've never had more than 1 monitor, so I'm trying to avoid any mistakes.

I game at 1080p, and with a single GTX 660 I can run pretty much any new(ish) game at 60fps maxed out- Battlefield 3 multiplayer, for example. Tomb Raider (without tress-fx) I can run at a stable 60 on Ultra (one setting below Ultimate- which is max). Crysis 2 runs very smoothly on Extreme. Bear in mind- I crank AA as high as I can. I have been eyeing the GTX 970 though... That card is the perfect card for futureproof 1080p- by that I mean, that by the time that the 970s performance will be inadequate, your entire setup will practically be obsolete.
