Gaming on an older 3.3GHz Xeon processor

Currently wanting to switch my server CPU out with an E5-2667 v2, wanting to know if any of you lads have any experience with it. The i5-4670 has just about the same single core performance, however, many benchmarks of it (for example running a 1080) says that it is a bottleneck because it of its core count. Would a 3.3GHz Xeon processor with 8/16 cores be a bottleneck for even some of the powerful cards (1080) and if not, how much leeway is there for futureproofing?

Supermicro MBD-X9DRI-LN4F+ - it is a server board. I want to make my machine into a partly gaming machine, sort of like what Linus did (2 gamers 1 CPU).

Yes I will be doing that, and I do have a second graphics card with passthrough. I will be getting two processors if my plan works out :)
