Boom max out every game for the next 5 years with a tri 980 sli and i7.
 
I think you dont need to spend that much money on the pc if you are just going to be gaming/recording. But here you go, and you could even save some money gettint the 4790k, but you will benefit from the 2 exta cores when recording.:

Getting 3 gpus is not very good idea. And throwing them in a mid tower case with little airflow is a terrible idea.


 
For most intents and purposes Dual SLI is enough, third one usually have terrible scaling anyway. Also, I would opt for SLI 970's instead of SLI 980's as their performance is often close enough that it will rarely be a deciding factor between playable and unplayable (at least from my own experience). Save the money and opt for an earlier upgrade would be my plan.

And you can knock your PSU and mobo a few notches too for dual SLI.

This is what you want for gaming. For your use, an x99 build is 100% pointless.
 
Tiny said it all. There's a certain point where the more cash spent is simply wasted money. I personally feel that's $2k. For gaming, the Z97 is the best route. The X99 CPUs are great but the Z97 CPUs are better because of the lower temps and higher overclocks. It's actually hard to get a stable high clock with an X99 board and there's no difference in gaming between the two. The only reason to spend more than $2k is for custom water loops. SLI 970s is awesome.

OP, you should look at 1440p monitors.
