I’m trying to save some money on a top notch gaming/streaming pc was looking at the Alienware Area 51 but figured for 5 grand I could build one better but have no idea what I’m doing. I have a shop nearby the will assemble it but I have to buy the parts and just want to see what other people suggest I should do. I am trying to get the price down to 3-4K. Also I’m going to be running 3 screens off it if that changes what I should buy.

Ok so you don't need to spend even close to your budget to have a high end build. This will play pretty much any game on ultra/high settings up to 4K/60hz.
