That Ryzen 1600 for 80$ is a great find. I noticed that I could beef up the video card and RAM if I cut some corners:

Would this be wise?

Yes except for the PSU, Antec VP's aren't very good and the PSU is the one part you really don't want to cut corners on as it's the heart of your system and a crappy one can ruin your other parts. I's spend a bit more and get this.
