I'd be taking the Nvidia set up. SLI actually works whereas there is an issue with AMD cards in CF with frame pacing, which hasn't been sorted out just yet.
 
Hey man, i am not an expert but i have done a lot of research and i know for sure that mid-October AMD will release Hawaii.
Hawaii will be next gen. high end graphic card for AMD 9970 comparisson 7970

My solution A: Wait for a bit.
My solution B: Dont go nor SLI nor CROSSFIREX(one Gpu is always smoother than 2 trying to work together), go get one better like gtx780 or 7970 ghz edition and BTW 790 is coming out in 2 months.

*if u can't wait,i think Sli works better than CrossfireX at scaling,but New Catalyst will eliminate that (maybe yes maybe not)

I will go for SLI, because I want to play games at really high frame rates, so I can cap the frame rate to 60 frames per second with V-Sync (I HATE SCREEN TEARING) and when I have a constant 60 frame rate with V-Sync, no game has mouse lag!
 
ok man :) well i ll go with FX-8350 and asus sabertooth..just more power with the same money :) u know AMD.. my advise go with 770gtx or 780gtx OR 7970 or 7970Ghz ed...(or wait for HD9xxx series).every one of those 4 is capable of max all the games silky smooth, and if u wanna sli/cros later do it..hope i helped :)
