Getting new desktop since a long time

Hey , I'm gamer since years , and a student , for that Ive been getting myself laptops for gaming and just throwing them after 2-3 years because they just can't hold on , ive been gaming on 1080p 60hz all my life ,anyway getting now a desktop and need your help people about 2 things that confused me , 1st thing is the CPU , i7-8700k or the ryzen 2700x? I'm pure gamer nothing else , another thing about the monitor , confused between getting 1080p 240hz , 1440p 144hz , ultrawide 21:9 100-120hz monitor or wait for 21:9 200hz? will my PC be able to reach max fps on these monitors?
The other specs are:
Gtx 1080ti
32 ram
700w
2T HHD + 256 SSD
motherboard depends on the CPU I guess. Willing to buy everything at the end of December. Any thoughts?

For gaming - get i7-8700k, if you're into OC. i7-8700, if you don't need OC.
For monitor - 1440p@144Hz would be the best option.
32GB ram is pointless for pure gaming. 16GB is more than enough.
