I have a MSI GS70 Stealth gaming laptop
specs -
Screen: 17 inch
GPU : Geforce GTX 765M
CPU : i7-4700HQ CPU @ 2.40GHZ
Memory : 12 GB RAM
Current resolution: 1920 x 1080, 60Hz

I have 2 mini display ports, and I am planning to add 2 more screens - most probably 2 more 17 inch screens.

Totally I will have 3, 17 inch screens. 2 additional screen and 1 laptop screen. I plan to game on all three of them if possible or else if not at least on 2 of them.

Will this significantly reduce fps ? Will the games even be playable ?

Whatever resolution those two extra monitors will be at, your performance will suffer. I'd say you'll be lucky to play AAA titles on medium.
You have to realize that adding two extra displays (@1080p) means that your graphics card needs to push three times as many pixels as it was designed to. I would say your performance would reduce by at least two times.
