I'd say you should wait for the 8700k to come back in stock late Oct/ early Nov with your budget.

In term of cooling, you'll want to go with the Fractal Design Celsius S36 (and go with the Cougar Panzer case to support that 360mm radiator) rather than the X62, but if you're into that RGB thing (or you love the aesthetic of the S340) then, by all means.

Last, you've picked an oversized PSU. Either the 7700k (max ~140W) or the 8700k (max ~170W) and a GTX1080Ti (max ~350W) would not require a 1000W PSU to keep them happy (rest of components draw little power generally like ~50W max total). The Corsair RMx 650W will serve this system just fine while allowing you to save ~150AUD.
