I’ve noticed that no matter what game I play, my CPU is always higher than my GPU in usage therefore causing me to get worse performance than I should be getting. I’m wondering if this is because of my PSU because my PSU is apparently very bad. Also when my frame rate goes above 120 FPS, my pc will turn off without warning (because of my PSU)
Specs:
RTX 2060
i5 8600k
Asrock Z370 M
Evga W1 600w

You have a very good GPU and only a 6 thread CPU. High CPU usage on pretty much all games will be a fact of life, so avoid thinking a few clicks will be able to 'fix' this situation. (In short, if not experiencing stutters, pay no attention to usage ratios, which mean quite little) If a higher GPU usage ratio makes you happier, crank up the resolution to at least 1440P, quality to very high, and 4x AA/AF, etc...)

As for a rig powering off suddenly, certainly a PSU would the very first place to start, perhaps yours is not quite up to the task of rapidly changing current requirements of a modern GPU can impose...
