I have a set of MSI R9 280x's running in Crossfire. I am getting a score of 3548 with Unigine Valley, so I decided to try to overclock them with MSI Afterburner a bit to see how much I can bump up the score.

Currently, everything is running at stock speeds.

Clock is at 1020, and memory is at 1500. I tried bump Clock to 1200 and memory to 1700, and I got a freeze while Heaven loaded up.

Any advice on overclocking? How far can I safely push these things? Is the freezing anything to worry about?

Baby steps. Try starting with an overclock of 1125MHz and leave memory alone. Once you've found that to be stable, then slowly increase the core or memory speed a little, re-test, increase (if previous increase was stable), re-test, repeat repeat repeat. Yes, it can take hours to find the optimal settings for your setup.

I'm also pretty sure a jump to 1200/1700 would require a voltage increase. If you left the voltage at stock, this is most likely why you froze.

The voltage tab on Afterburner is locked, it does not look like I can adjust that at all. Is that an Afterburner limitation, or a gpu limitation?
