I currently have a GTX 1060 and plan on buying a 3080 Ti, Would i be able to use both or would i just have to stop using the 1060 altogether?

You will have to switch the card out completely. Iirc only thr 3090 still supports SLI. It doesn't matter anyways, the 3080Ti is stupidly more powerful, you won't ever miss the 1060.

Unless you have more than 4 monitors you want to drive, there's no point in keeping the old card installed on the system.
