I have a 14 pin gpu and only have split pcie cables like 8 plus 8 cables but I have two but they both look like the image below but one of the 8 pins can break down to 6 so could I use one of them as an 8 pin to the 8 pin on the gpu and strap the other 8 pin out of the way then use the other cables 6 pin into the 6 pin slot? And just have the unused 8 pin and 2 other pins out of the way?

Yes, its the reason why its got a split. In case you only need 6. Just leave the other 2 unplugged.

this was my old GPU, I did similar as it used 6 & 8 pin. the extra cable can be seen on top

You seem to have an extra cable there. One end goes to PSU but of the other 2 cables, you use 1 8 pin & 1 6 pin, and leave the 2 pin not attached.

I keep reading that it's best to use two separate cables for the 6 and 8 pins instead of the same cable
