My build is fairly old and the GPU needs to be replaced, looking for recommendations!

The GPU I am replacing is R9 295x2

That motherboard doesn't use UEFI BIOS. It won't support any of the newer GPUs.
The best you'll be able to do is something along the RX 580 lines. Just make sure that your GPU doesn't require a UEFI motherboard.

Anything you can get ahold of basically. For performance parity, you would probably be looking at GTX 1060 6GB or RX570/580 8GB or up. These are in very high demand since there are basically no low end cards being produced. Might be better off checking your local retailers for things like the RTX3060 or RX 6600 and up.

I've found most of the GPUs will still work, they just won't produce an image before Windows is loaded. A problem when building fresh, but not so much upgrading.

Worth it to keep an old PCIe graphics card around for troubleshooting.

Worst case, time to upgrade everything. 1st gen i7 is pretty dated. Most of your entry level i3 are a match for even the hex cores in throughput. Single thread performance is almost double. Any i5 or Ryzen hex core is going to be a vast improvement and that would not be that expensive.
