I am currently in between getting a new motherboard and CPU this consisting of a i7 8700k and some z370 motherboard, or keeping my current i7 6700k and AsRock z270 taichi and upgrading my GTX 1060 6gb to a RTX 2070 super. Also i will end up getting a NZXT kraken AIO cooler if i do choose to get the new CPU.

Current specs:
Case - NZXT H500
CPU / Processor - I7 6700k
GPU - GTX 1060 6GB
Power supply - cm650x
motherboard - Asrock z270 taichi
CPU cooler - Hyper 212x evo
ram - 2x4 Corsair vengeance LPX 2400 - CMK8GX4M2A2400C14
1x8 Hyper fury - HX424C15FB2/8

Which would gain more performance / fps as i'll mainly be gaming at 144hz, so fps i kind of a big deal here.

The performance bosst of a 8700k vs a 6700k is around 15-18% and in gaming the performance is negligible as most games are not CPU limited these days. So unless you are playing ARMA or heavy simulation games a much bigger boost would be going to the 2070 Super which is something like a 70-75% performance boost!
144hz 1080p? If so a GTX 1080ti/RTX 2080 would be a viable upgrade that would provide that system high refresh rate via triples A titles, ultra settings. Then you can upgrade the CPU/Motherboard/Memory in the future. You still have a viable processor that can be overclocked along with the future graphics card upgrade. You'll need a better CPU cooler if you decide to overclock.
