My GTX 970 graphics card has a 6 pin socket which I put a 6+2 pin cable into. However it also has an 8 pin socket besides it. Should I go ahead and use a 6+2 pin on that?

You need both the 6 pin and 8 pin pcie slots filled to use your GTX 970. You can use the 6+2 pcie connector for the 8 pin once you clip the 2 pin to the 6 pin.

use the 6+2 in the 8 pin and a separate 6 pin in the other socket

Yes that is how it was designed. The 6 + 2 pin is so that you can either use it as a 6 pin PCI-e power connector or 8 pin (6 + 2pin combined) PCI-e power connector.
