Graphics card pairing for 1240 v5?

I was looking for a good pairing for the E3 1240 V5 Xeon, Im just doing some gaming and editing and on occasion some streaming.

Do you mean GTX? And also I wanted a more accurate answer if any. I wanted to cut back on bottlenecks between the CPU and GPU. My old R9 380 Strix died due to improper storage when transferring my motherboard to a new case. And my power supply should be ample for most new age graphics cards (Unless it requires some nonsense such as a card with hybrid cool and like 4 8 Pins) because it's a Thermaltake 600W PSU.

You really don't have much limitation when it comes to your choice of gfx card. Nvidia's GTX 1060 6GB or even the GTX 1070 are both suitable. So would AMD's RX-580 or Vega 56. Below those are the GTX 1050 Ti and RX-470 if the others' price is a limitation.
The 1050 Ti would be a tier below your old R9-380, and the RX-470 would be a tier above. Use Tom's Hierarchy Chart to see where the cards fall in relation to each other.
