Gaming on two 1080 monitors is not a very nice experience, since the bezels will cut your character or gun or whatever it may be in the middle... A single 1080 and a secondary that you won't game on would be a better description. Currently, a fantastic GPU provided your power supply/rest of system can handle it, would be the R9 380 on the AMD side, and the GTX 960 on the NVIDIA side. Post your full specs as well as power supply make and model, before asking for help, next time. :)

agreed with 2 monitors not being great for surround gaming. 3 >>>>>> 1 >>> 2.

but to power 1 1080 with bragging rights you want a 970 or amd equivalent.
to power to 2 or 3 youre looking at 980 ti or amd equivalent. (980 just isn't a good deal)

but a 960 wont give you any bragging rights at 1080 whatsoever. I sold my 960 for a 970 and im using a single 1080
