Question Graphics card utilizes 100% then proceeds to crash on any game.

Recently, I have built a completely new PC, but the only thing that is not new is the graphics card.
Specs of the current build:
EVGA GTX 1070 FTW
Ryzen 7 3700x
Corsair Vengeance RGB 16GB DDR4 3600MHz CL18
Kingston A2000 1TB
ASUS ROG Strix B550-F
Corsair RM750 750W
My issue is that my games consistently crash. I have had the same problem on my old rig with this graphics card and this why I built this new computer in the first place. It looks like the issues has traveled over to my new rig.
I have tried to update my driver, windows etc. Still nothing. I can start up a game, plays fine and then the utilization spikes to 100% and proceeds to crash. I have tried to search for any solution on the Internet, but have not find any.

may i know what s the difference between you old rig and new build , and it is the single ram 16g stick , or 8g*2 doub stick?
